Almond and cheese Scone

Scones are so easy to make and it takes only 30min. This recipe makes 12 light and fluffy scones. I added almonds and cheese. You may also wish to add other ingredients like chocolate chips, cranberries, orange peel, walnuts etc.


Ingredients

  • 90g butter, cut into cubes

  • 350g self raising flour

  • 1 tsp baking powder

  • 1tsp salt

  • 3 tbsp caster sugar

  • 1 egg (beaten, leave some to spread on top of scone before baking)

  • 125ml milk

  • 1 tsp pure vanilla essence

  • 1tsp lemon juice

  • 20g chopped almonds + 10g to add on top of scone

  • 20g cheddar cheese (cut into 1cm cubes + 10g shredded to add on top of scone


Method


  1. Preheat the oven at 200°c

  2. Mix self-raising flour, salt, sugar and the baking powder in a large bowl

  3. Add the butter, rub in with your fingers until the mix looks like fine crumbs.

  4. Create a well in the middle of the mixture, add egg, vanilla essence, lemon juice and milk, combine it quickly, it may feels wet and sticky at first. Keep combining until well mixed. Set aside.

  5. Next, prepare a dry clean surface. Sprinkle some flour onto the work surface and tip the dough out. Knead the dough with hands. It should look like a good dough and not wet. Add more flour if the dough is too wet (as some eggs are larger and that can be a reason).

  6. Divide the dough into 2. Add almonds to 1 dough and cheese to the other dough. Fold in 2 times.

  7. Shape each dough into a round ball and flatten it down. Use a cutter and cut it into 6 slices (like pizza cut).

  8. Prepare a baking tray with a sheet of baking paper. Place all the scones into the tray. Brush some egg on top of the scones. Add almonds on top of the almond scones and cheese on top of the cheese scones.
