Mango Panna Cotta

Panna Cotta is one of my favourite Italian dessert and it is one of the easiest dessert to make. Mango is my favourite tropical fruit. The marriage of these 2 is like a romantic East meet West story. I love the combination. Mango is juicy and sweet & Panna Cotta is smooth & creamy…
… the taste is simply “Wow”!

Ingredients
500ml heavy cream
2tbsp Sugar
1 vanilla beans
1tsp vegetarian agar agar powder or gelatin
1 mango (dice)
Method
Panna Cotta
Add all the cold ingredients: heavy cream, sugar, agar agar, vanilla bean in a sauce pan
Turn the heat to medium and stir well with a whisk.
When tiny bubbles start forming around the edges, reduce the heat at lowest. Keep cooking and stirring for another 2 minutes
Turn off the heat and fill them into mini glass dessert bowl
Refrigerate for at least 1 hour
Add dice mango to the top of Panna Cotta before serve.
Tips 1: Use vegetarian agar agar powder. It requires less time to thicken compared to the animal gelatin.
Tips 2: Best serve with mango puree. Add 1 mango, 2tsp of lemon juice and 40g powder sugar into a food processor and blend for 1 minute to create a smooth puree.
